料理長を務める川田智也氏は若い頃から中華料理に興味を持ち、10年間「麻布長江」で修行を重ね、その時に日本料理にも興味を持ち、「龍吟」にて修行をした
日本料理と中華料理の知識を生かし、台湾「祥雲 龍吟」の立ち上げにも参加した事があるベテラン
インタビューでは「中国料理の伝統的な下処理の方法と、日本料理の強烈な下処理の緻密さ」を現したのが「茶禅華」と語っている
2017年にオープンした「茶禅華」はその同じ年にミシュラン二つ星を獲得し、2021年には三つ星に昇格
今では東京にある超予約困難、中華料理店として名を馳せている

Mr. Tomoya Kawada, the head chef, has been interested in Chinese cuisine since he was young and trained at "Azabu Choko" for 10 years, at which time he also became interested in Japanese cuisine and trained at "Ryugin". He’s a veteran who has also participated in the establishment of Taiwan's "Shoun Ryugin", using his knowledge of Japanese and Chinese cuisine. In an interview, he said that "Sazenka" is the embodiment of "the traditional preparation methods of Chinese cuisine and the intense precision of preparation of Japanese cuisine". "Sazenka" opened in 2017 and was awarded two Michelin stars that same year, and gained its third in 2021. It is now a renowned Chinese restaurant in Tokyo that is extremely hard to book.

헤드셰프인 카와다 토모야씨는 어렸을 때부터 중화요리에 관심이 있었으며 “아자부 초우코”에서 10년간 실력을 쌓으면서 일본요리에도 흥미가 생겨 “류우긴”에서 경력을 쌓았습니다. 일본요리와 중화요리에 대한 깊은 이해를 바탕으로 대만의 “쇼운 류우긴”을 설립하는데에도 참여한 베테랑입니다. 그는 인터뷰에서 “사젠카”는 중화요리의 전통적인 준비방식과 일본요리의 철저하고 치밀한 준비방식의 구현이라고 말한 바 있습니다. “사젠카”는 2017년에 오픈하였고 오픈한 해에 미슐랭2스타를 획득하였으며 2021년에는 미슐랭3스타 레스토랑으로 거듭났습니다. 지금은 도쿄에서 예약하기 매우 힘든 중화요리전문점으로 잘 알려져있습니다.
