シェフ岸田周三氏は三重にある志摩観光ホテル「ラ・メール」にて料理人の道を歩き始め、レストラン「カーエム」で経験を積み、フレンチの本場にてミシュランレストラン「アストランス」でも料理人を勤めたことがある、フレンチのベテランシェフ
2006年ではモダンフレンチの自分の店「カンテサンス」を開店した
なんと、オープンして1年でミシュラン三つ星を獲得し、今年で16年目となる

Chef Shuzo Kishida started his career as a chef at the Shima Kanko Hotel "La Mer" in Mie, and went on to gain experience at the restaurant "KM". He has also worked as a chef at the Michelin-starred restaurant "Astrance" in the home of French cuisine, Paris. He's somewhat of an expert in the field. In 2006, he opened his own modern French restaurant, "Quintessence" and within a year of its opening, it was awarded three Michelin stars and is now in its 16th year of holding them.

해당 레스토랑의 셰프를 맡고 있는 키시다 쇼조는 미에현에 위치한 시마관광호텔의 “라・메르”와 레스토랑 “카에므”에서 일하며 셰프의 길을 걷기 시작하였습니다. 이후 프랑스요리의 본거지인 프랑스 파리로 건너가 미슐랭 레스토랑 “아스토랑스”에서 다양한 경험과 지식을 쌓았고 이 분야에 있어서 그는 전문가라고 할 수 있습니다. 2006년에 독립하여 모던 프렌치레스토랑 “칸테상스”를 오픈하였고 오픈한지 1년만에 미슐랭 3스타를 획득한 뒤 올해로 16년째 3스타를 유지하고 있습니다.
