The owner, Yamato Yasui, who has branched away from "Sugita", was originally a Japanese cuisine chef. With his parents owning a sushi restaurant, he dreamed of becoming a sushi chef since he was in elementary school. In order to pursue his dream, he attended a culinary school and spent 4 years in training at "Kojyu" in Ginza to learn the fundamentals of Japanese cuisine. Then, he found and admired "Nihombashi Kakigaracho Sugita", and started his sushi apprenticeship there. After 6 months of training, he became the second-in-command, and 5 years later, he opened his own restaurant, โ€œSushidokoro Yamatoโ€.
